I made Nigella's dairy-free Lemon Tendercake, but it seems raw in the middle even though I added extra onto the baking time. Is it okay to eat?

NIgella's Lemon Tendercake With BLueberry Compote (from AT MY TABLE) is a vegan cake that is different in texture to a traditional sponge cake. It has a denser, moister texture than a sponge cake and is more like an aerated pancake.

We suspect that the cake is baked properly but maybe the expectation was for a lighter, dryer sponge. The cake is very moist, almost as if it had been doused with a syrup. In terms of food safety, as already outlined, we suspect that the cake was baked properly, particularly if the baking time was extended. But it is also worth mentioning that the cake doesn't contain any eggs or high risk ingredients.
