Why Does The Dressing Disappear If I Store The Sesame Peanut Noodles?

Full question

I've made the Sesame Peanut Noodles a few times and add red caps, bean sprouts, snow peas. However I've found the next day the dressing and flavour has disappeared. I double the dressing amount and still.....it just disappears.

Nigella's Sesame Peanut Noodles (from NIGELLA EXPRESS) are noodles that are tossed with a dressing made from sesame oil, garlic flavoured oil, peanut butter, sweet chilli sauce and lime juice. We suspect that your noodles are absorbing the sauce as they stand, making it disappear.

As the recipe is an Express one, the noodles used are the already cooked type bought from the chilled section of the supermarket. These are usually coated with a thin layer of oil, which means that they don't absorb the dressing as easily. If you are using noodles that you have cooked yourself then they may absorb the dressing more easily, particularly if they are still slightly warm when you toss them with the dressing. If you are cooking the noodles yourself, it may help to rinse them well with with cold water after cooking, let them drain well and then toss them with a little vegetable oil before using them in the dish. If you are making the noodles ahead then you could also store the noodles mixed with the vegetables and the dressing separately and then toss them together just before eating.
