Full question

The cake looked so delicious that I decided to make it for a friend's birthday. My cake looked lovely and had a good flavor, but the texture was too heavy. I was so disappointed. Not sure what I did wrong?

Nigella's Ginger And Walnut Carrot Cake (from AT MY TABLE) is a very popular cake that is gently spiced and studded with nuggets of walnuts and crystallized ginger. The cake is quite different to a regular store-bought carrot cake. It is not supposed to be spongy but more rustic and dense.

The cake, although not spongy, should have a tender texture. If the cake was very dry and solid then it could have been baked for too long. As it is quite a large cake, we give an approximate time for baking and you should start to check at the lower end of the range. Also, make sure that all of the ingredients are at room temperature as if the eggs and carrots are fridge cold then the ingredients in the batter will not mix together as well and the cake will be heavier.
