Nigella's Goujons Of Sole With Dill Mayonnaise (from NIGELLA EXPRESS) are strips of white fish that are coated in breadcrumbs and fried until golden. The goujons are served with a mayonnaise that is speckled with chopped dill.
Nigella suggests using panko breadcrumbs if at all possible. These are Japanese breadcrumbs that are particularly light and flaky. Cornflour (cornstarch) is ideal for dusting the pieces of fish if using panko as cornflour is gluten free, so when it cooks it is lighter and less "chewy" than regular wheat flour. Using the two together will give the fish a particularly crisp coating, which matches well with the very tender sole. However, if you only have regular flour then you can certainly use this for dusting the pieces of sole.
