Nigella's Goujons Of Sole With Dill Mayonnaise (from NIGELLA EXPRESS) are strips of white fish that are coated in breadcrumbs and fried until golden. The goujons are served with a mayonnaise that is speckled with chopped dill.

Nigella suggests using panko breadcrumbs if at all possible. These are Japanese breadcrumbs that are particularly light and flaky. Cornflour (cornstarch) is ideal for dusting the pieces of fish if using panko as cornflour is gluten free, so when it cooks it is lighter and less "chewy" than regular wheat flour.
