Our answer

Nigella's Cheddar Cheese Risotto (from NIGELLA EXPRESS) is a comforting dish made with rice and cheddar cheese and is as soothing to make as it is to eat. The white wine is added to the rice at the beginning of the cooking process and contributes flavour as well as moisture.

If you can't use alcohol then you can use extra stock (to make a total of 1.125 litres of stock) but we would mention that as the cheese can be slightly salty you need to make sure that you use a weak stock or a home-made stock with no added salt, as otherwise the finished ristotto could taste unpalatably salty. The wine also adds some acidity, which cuts across the richness of the cheese. So when you add the first 125ml of stock (instead of wine) you could add a good squeeze of lemon juice. You may also want to add a small extra squeeze of lemon juice before serving, to balance the dish overall but without the risotto becoming too lemony. So taste first and adjust according to your own palate and preference.
