Full question
Can I please substitute sour cream in the Arabian Pancakes? I’ll eat practically anything, but I don’t — I CAN’T — like yogurt. Believe me, I’ve tried … a lot.........
Our answer
Nigella's Arabian Pancakes With Orange Flower Syrup (from NIGELLA SUMMER are small, American-style or drop scone-style pancakes. The ingredients include both baking powder and bicarbonate of soda (baking soda) to give the pancakes a light and fluffy texture. However, bicarbonate of soda needs some acid to activate fully, so a small amount of yogurt is added to the batter for this reason. As it is only 3 tablespoons it is unlikely that you will taste the yogurt in the pancakes, though understandable that you may not want to buy a pot of yogurt for a small amount.
You could use another sour dairy ingredient as an alternative. Nigella suggests labneh, though this is a thicker, strained yogurt, or you could use kefir or buttermilk as other alternatives. Sour cream would also work in the recipe as an alternative to yogurt, particularly if you have some already open and in the fridge.
