Strawberry Pancake

Introduction

We don't grow blueberries or raspberries in the Philippines. But somewhere in the north in a province called Baguio, where it is cold and high in the mountains, people manage to grow strawberries and these are shipped to the lowlands like in Manila where I live, every so often. One recipe I saw in Nigella's show inspired to whip up this recipe once and ever sinceit became a Sunday breakfast staple in my family. I call it "Strawberry Pancake" and it's so easy to make. Thanks Nigella.

Metric Cups
  • strawberries
  • pancake mix
  • eggs
  • sugar
  • vanilla extract
  • ricotta cheese
  • butter
  • flaked almonds
  • strawberries
  • pancake mix

Method

Strawberry Pancake is a community recipe submitted by symphony0509 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Over medium-high flame, heat up the strawberries with sugar, a tablespoon of butter and few vanilla drops.
  • Stir every so often until the butter blends and the sugar melts into a red syrupy consistency. The strawberries should retain
  • much of their integrity and not become mushy like jam. Prepare the pancake mix as directed with eggs, a bit of oil or melted butter, etc.
  • In a shallow, round baking dish which has been buttered, pour half of the batter. Spread the ricotta cheese over and top with the sweetened strawberries.
  • Try not to put so much of the sugar syrup as possible
  • . Then cover with the remaining half of the pancake batter. Sprinkle the very top with slivers of almonds and sugar, and then bake in the usual 150-180 degrees centigrade oven for 20-25 minutes.
