Hot Vietnamese Chicken and Mint Salad - I did play with the recipe a little! I added mustard and agave syrup to the other ingredients in the sauce. I then stir fried the cabbage, onion and carrot with some rice noodles, and then added cold ingredients - chicken, spring onions, and green pepper, and sprinkled some toasted cashews on top. The mint from the garden on top just cleanswed the palate..... lovely!
