Every year I make a cheesecake for my husband's birthday. Made with gorgeously sweet jap pumpkin and gluten-free arrowroot biscuits, this cheesecake was saved from death by water bath when the springform tin came apart as I lifted it out. Luckily it was still delicious and worthy of the celebrations.
