I welcome spring with this cake! The cake has a lot of ingredients and is so colourful. I struggled a bit with the marzipan, because it was difficult to roll out. But in the meantime it was a very good exercise for my muscles. I'm happy with the shiny result. Also the taste of the Simnel Cake is very rich and perfect to celebrate Easter. Hippity Hoppity Happy Easter!
