Orange, Cardamom, Polenta Cake with Cashew Frosting, crushed Pistachios and Rose Petals I used Orange instead of Apricots and jazzed up the topping with a cashew frosting with a touch of Rose Water and Rose Petals to give it some colour. Absolutely yummy scruffy and gluten free.
