This time last year I was living in Morocco. This cake was a lovely reminder of the flavours and perfumes of that time. It was devoured in one by friends and family who declared it 'utterly yum'! For me it has just the right balance of 'stickyness', sweetness and a bit of crunch from the polenta. As with all Nigella's recipes the timings and instructions are spot on and this couldn't be easier to put together. (don't stress if you can't find rose petal jam, it is really only the final glaze so the apricot option is absolutely fine)
