I made a miniature version of this cake because I wanted this cake all to myself and didn't want to share it with my family (only kidding, I made a few of these mini cakes!). The flavours and fragrance of rose, pistachio, almond and cardamom are exquisite on their own, but together in this cake, it is almost like magic. I decorated the surface of the cake in almonds to echo the ground almonds in the cake batter. I loved the green of the cardamom and the pink of the dried rose petals so I thought they would be beautiful to decorate with too. I also made an apricot sauce to go with the cake (although the cake was perfect on its own too!). I'll be coming back to this recipe again and again. Thank you for this recipe Nigella! My family and I loved it.
