Layered Mango Almond Meringue Cake on my favourite cake stand from the line by Nigella Lawson. The cake is inspired by the Strawberry Meringue Layer Cake for the June Cookalong. As she says, it’s the perfect way to celebrate the summer solstice. The cake was fab, simple work too thanks to the KitchenAid Stand Mixer. I used mangoes instead of strawberries, clarified butter/ghee instead of butter, and a brown sugar light meringue topping. Thank you for the inspiration. We LOVED the cake.
