Since I moved to US from Italy I miss bread. My father and generations ahead were bread bakers. I realized that baking bread (by which I mean putting my hands in the dough, smell the scent of the rising yeast) reconnects me to my family and to the places of my childhood. To honor my Italian heritage (I should say passport, but I find heritage more romantic) I used dried oregano and fennel seeds. These are the flavors you can find in taralli and focaccia, exactly as my dad used to make them. I believe these rolls will be amazing with nice tomatoes and a glass of wine every time of the year.
