When I removed the cake from the oven it was lovely with just a couple of cracks on top. But then when it cooled the middle just crashed! Glad Nigella warned us… I decided to create a nest using a Portuguese recipe “Fios de Ovos” where egg yolks are cooked in sugar syrup into thin strands.
