Making this cake felt like I was paying homage to my late Nanna Joan - we both LOVE anything ginger especially with nuts and cream cheese...oh my goodness = deliciousness. It was fun and easy to make - I substituted in 1 tsp pureed crystallized ginger for the ginger juice in icing. Fab xx
