After taking the cake out from the oven, I thought "uh oh, it feels a bit dry", but after the first bite, oh wow, all of the wonderful surprising tastes and textures of carrot, walnuts and ginger just worked so well together. I made my own ginger candies from whole slices of ginger instead of the store-bought one to add an interesting look to it. I can't wait to make this cake for my mum's birthday, she would definitely love (me for) it.
