Today is Anzac Day in Australia where we honour all our service people who have fought in conflicts throughout the world. In particular we honour those people who gave up their lives for our country. I have made this pavlova in memory of my father James Gill who served in New Guinea during the Second World War. Dad loved a slice of pavlova which Mum made for us topped with plenty of strawberries and whipped cream. His RSL badge is displayed in the photo. This is the first time I have made a lemon curd pavlova as per Nigella’s recipe. I added the blueberries and raspberries as I thought they looked pretty and gave some fruity flavour. I would love to win Nigella’s signed cookbook because I think she is the Goddess of great recipes and fabulous cooking.
