I have been making pavs for quite a few years, and have been especially inspired by Nigella's recipes, and frequently make both the lemon and cappuccino pavs. I think the top tip from Nigella is to turn the pav upside down before putting the curd and cream on to keep the sides and the (original) top of the pavlova crispy.
