I didn't have enough lemon (I made it without proper planning) but I did have Rhubarb, so I make a Rhubarb curd to put on my cow pat of a Pavlova. Went down very well but those roasted almonds really do make it! Very tasty & the rhubarb was nicely sharp enough to work with the meringue.
