I live in New Zealand and have been a fan of Nigella’s work since I was a teenager. I’m 31 now. I attempted this recipe a month ago, before this competition was even announced because it had all my favourite ingredients and seemed like just the cake I wanted to bake to celebrate Autumn feels. I am, however, a vegan and subsituted the eggs in this recipe for “flax eggs” (a common vegan alternative for eggs). The cake turned out a little more moist than I would’ve liked but the taste hit the spot and it was devoured by my friends and flatmates within minutes. I have attempted this recipe once again since then, with eggs, for my non vegan mates and they were delighted. No doubt this recipe is a big hit.
