This fragrantly floral cake was delightfully fun to bake and perfumed the house with wonderful memories of India. The rose water I used is from a holy town called Pushkar, which I visited last year. There is something therapeutic and almost ritualistic about shelling pistachios, I used the salted ones for the decoration, just for surprise.
