My take on Nigella's Pear, Pistachio and Rose cake with a 100% natural pink dressing made with fresh pomegranate juice and decorated with pistachio and pomegranate seeds instead of rose petals. I loved that it contained no butter and raw pear purée gave the cake an amazing texture. Also, I am gluten intolerant and it was perfect as a birthday celebration cake! Now it's gluten-free, dairy-free AND guilt-free :-)
