It's not easy being free from wheat/dairy and being tasty. But wowsa this recipe rocks my tastebuds!! The warm crispy shortcake encases the sliced strawberries between the cream and berry crush. I used Doves gluten free plain flour, Pure Soya spread and Elmlea cream whipped with icing sugar & vanilla. Next time I'll try whipped coconut cream.
