The freshest peacan nuts were used in the base to provide an uplifting, crisp foundation to the cake. The main layer contains an extra dash of the finest unadulterated maple syrup, though not so much to overpower the senses. The cheesecake is topped, as per the recipe, with the same maple syrup. The cake is a perfect balance of sensations: the distinctive maple sweetness in the base and topping balance perfectly with the velvet creaminess of the main layer, and the gentle fruity freshness of peacan nuts accentuates that wonderfully. Indeed, a handful of peacan nuts have been finely grated into the main layer to add a nutty finish and discretely crunchy texture, mimcking the trademark sensation of velvet - both fantastically smooth and wonderfully brazen.
