My family love this Clementine cake. I cover it with foil for the whole bake to keep the top light as I like the contrast to the darker sides. I make a glaze from freshly squeezed clementine juice and icing sugar and brush it over the top. The kitchen smells divine and my husband and sons are happy people as it is their favourite cake, served with a dollop of whipped double cream.
