My wife bought a box of clementines the day before she flew home to see family for a month. Leaving me with a LOT of fruit and not a lot of time to eat it. Nigella's recipe saved me. My motto for this is now: When wife gives you clemons, make clemon cake (It sounds better said out loud!)
