I decided to make the clementine cake for a dinner party since it’s bitterly cold here in London, Canada and I thought everyone would appreciate something warm, dense, fragrant and evocative of the spring time we’re all so eagerly waiting for. I used a NutriBullet to purée the clementines in batches which I found sped up the blending process and gave the cake a really great texture. I also dusted the cake pan with extra ground almonds from the recipe instead of flour and it worked brilliantly. The cake was a huge success and I look forward to making it many more times.
