This is a cheesecake I made for the Jewish festival of Shavuot. It doesn’t have a biscuit base because I made it for my friends who don’t eat anything with gluten and who are on a weight loss eating plan - not the easiest of combinations! My citrusy cheesecake is made from Quark and low fat cream cheese that is flavoured with fresh orange juice, bursts of orange zest, a splash of rose water and vanilla. The rise for this fluffy cheesecake comes from beating egg whites with sweetener and gently folding in the rest of the ingredients. This photo is from my second attempt - the first one was an absolute disaster! I think any photographic evidence of it would have made my grandmother cry! I don’t usually make cheesecakes for Shavuot but I chose to do it this year because I’ve recently become more confident in my cooking skills and in my cultural heritage as a Jewish woman with Indian heritage.
