We chose to stick to the recipe and keep the classic white chocolate taste as the prominent flavour, adding a little more lemon juice to give it a bit of a kick. We kept the biscuit base crumbs quite large to keep a crunchy, crumbly texture at the bottom of the smooth cheese. Perfect treat to cheer us up on a rainy, Scottish day.
