Decided to make individual white chocolate/lime Gingernut cheesecakes, fresh ginger whizzed into the gingernut biscuit base. Added mascarpone cream cheese. When melting the chocolate- I added finely grated lime zest & used lime juice. Topped with slightly sweetened whipped cream & fresh lime slices.
