My Mum turned 71 the 15th of July and I made her this cake. I still had some ginger biscuits left from when we went to Ireland so I used those for the base. I finished the cake with some dark chocolate sauce and a strawberry & the guests (especially my Mom) loved it! I will make this cake again for one of our next parties because it's nice that you can make it the night before. It's really an easy, lovely and yummie recipe.
