At the risk of appearing to self sabotage the pleasure of cooking and eating this to die for concoction, there are numerous things wrong with this photograph: 1) My crappy camera, 2) the heat here in Sydney is un-bear-able. I only had a small window to photograph and put the cake away, 3) the top part is 1 cm in diameter less then the bottom half: I have mismatched cake tins. Pardon me. BUT The cake was delicious. Its the golden syrup you know. I did use only 125 gm of dark chocolate instead of the recommended 175g. I probably added too much boiling water to the icing, but that's how I like it!! lol. It somehow rose less on the left side then the right; I did not spread the batter evenly before putting it in the oven. Nonetheless I didn't share any of the cake and devoured it within a couple of days! Clang! Finally. This was a New Years resolution (to participate in Nigellas Cookalong) so I am feeling very smug and satisfied to at least be able to participate, and say Thank you. Thank you Nigella and the team for your recipes. Every meal is like a hug. Happy Australia Day and I look forward to participating again and again in the cook a longs.
