I scaled up this recipe as I am: a) cooking for three hungry brothers and b) a firm believer in the “more is more” philosophy. I let the dough sit an additional 2 hours for an even flakier pastry, added an egg wash and served it with more creme fraiche and mint. Overall it’s a versatile dessert - perfect to share with family at the dinner table and equally perfect to inhale alone whilst hunched over the kitchen sink at 1 in the morning.
