Nothing beats a dish that heroes what nature currently has in season. The sharpness of the blackberries against the buttery pastry makes for a winning combination. I also add a touch of lemon zest to mine for some extra zing to balance out the crème fraiche. Don't panic if any of the jammy goodness leaks from the side, it makes for a delicious juicy sauce when serving.
