Everybody tells me that it is way too early for Christmas, but I just feel that the air and the atmosphere starts changing just after Halloween. This year even more so. Before the pandemic I was not one for baking. I already had tins, a mixer and some utensils but I always felt that I'm more cut out for cooking up starters and main courses, but not quite desserts. Being indoors however, I, like most people, first gave making bread a go. I slowly moved on to cookies and cakes - nothing overly elaborated but I did build some confidence. Back to Christmas festivities then. With my tree up and lit, I felt that the best way to celebrate my newly decorated apartment was by baking something. And out came Nigella's Cookalong! I had never baked a cheesecake before so this was a first for me. I am still not confident enough to personalise recipes and I admit that I followed every single instruction to the letter. I was however very satisfied with the result, and my partner loved it! What he liked the most, is the part where I told him that through this recipe, I had found out that cheesecakes are baked in a 'shebang-marie'. Yes, I actually thought that that is the technical term for the water bath... Wishing everyone all the best for the holiday season and hang on in there, we'll be out and about in no time!
