Amidst the busy hustle and bustle of trying to navigate university during a pandemic, baking this cheesecake was the perfect relaxation activity. I added my own twist to the recipe by adding a few tablespoons of sour cream to the bater. It not only added to the creaminess, but also fluffiness of the cake. It baked beautifully and the maple syrup on the top shone so exquisitely it almost sparkled. Overall a great recipe that I look forward to making again!
