What a deliciously moist and fragrant cake. I replaced the sugar with some crystallized ginger, a little maple syrup and a few shakes of cinnamon, added a few walnuts with the pistachios and glazed with ginger jam mix instead of apricot as that's what I had. It tastes even better today with a dollop of crème fraiche!
