I started with the sponge: 225g butter; 225g caster sugar, 4 eggs, 225g SR flower and whizz in the mixer. I let the raspberry/ lemongrass soak overnight before adding the custard. I let that set overnight then added the cream / caramel and fruit before enjoying in the back garden.
