A gorgeous cheescake, so lovely and light. I have decorated it with edible summer flowers and some black gooseberries. I made some black gooseberry compote to go with it, but did not serve in the end as it would overpower the delicate taste. The ginger of the biscuit is enough to balnce the flavours. I will definitely be making it again!
