To make my crust, I used Biscoff biscuits with ground ginger. I adorned it with drizzles of white chocolate and white chocolate callebaut buttons. The cheesecake is so light and subtle, straightforward to make. I particularly loved the way the crust rises slightly at the edges to cup the delicate filling.
