This delicious cake could easily be show stopper cake for any celebration.The ermine icing is delicious and the texture of the sponge is divine. I decided to make it with a slightly Christmas/wintery feel by sprinkling with desiccated coconut and silver pearls on the top. The flavour of the cake needs no enhancement whatsoever.
