It’s Queen’s Birthday Holiday here in NZ so a Victoria sponge was a perfect afternoon treat! Real raspberries are rare in Autumn so I used freeze dried raspberries and strawberries inside along with the jam, and added blue edible flowers on top for all the colours on the flag!
