My family and I holiday in North Norfolk every year and I decided to make this tart for them. I made fresh lemon curd and made the base out of ginger nuts. My neighbour had some gooseberries and they made a fresh and bright addition to the top like little nuggets of jade. The ginger nuts made it a little messy to eat but the combination is unbeatable!
