I made this cake for my Dad's birthday, lucky I did as I was very short on preparation time for this special occasion- and what a breeze it was. Forgot the coffee element (had planned to use some instant coffee in the hot water as I don't have espresso powder) and used avocado oil as this was all I had. For the icing I used butter and remembered to dissolve a little instant coffee in the cold water. As another entrant did, I decorated with fresh berries to celebrate the Aussie summer. My husband whipped the cake outside for a quick pic between blowing out the candle and cutting, and the raspberries perfectly and unfortunately match the wheelie bin lid in our backyard. Really enjoyed adding Nigella's Dark and Sumptuous Chocolate Cake to my repertoire. Will try pistachios and rose petals from my garden to top next time.
