A classic Victoria Sponge baked in honour of the birth of my friend’s baby boy, Teddy. There is no self raising flour in Kathmandu, so it’s always a bit fingers crossed as to whether it’ll rise nicely and if the crumb will be light and not dense. This one was a cracker.
