Coronation cake! A twist on Nigella’s classic Victoria sponge by making it GF for my husband who is coeliac (just by changing the flour to a GF one), and adding a flourish of regality on the top with some colourful buttercream icing and adorning with jewels of fresh raspberries. Long live the King!
