We are having a “Christmas Bake-Off” at work. I wanted to join in but wasn’t sure what to bake. I wanted something that was easy, but that would look and taste delicious. Of course I turned to Nigella for inspiration! This recipe was really very easy, and I love that it’s gluten free (so my gluten free colleagues won’t miss out on the taste test)! I did roll the log when it was still warm and left it like that whilst I made the butter cream. I didn’t want it to crack when rolling and doing this ensured a perfect roll. I “might” have cut an end off to taste, just to make sure it was fit for the bake-off. I don’t have a particularly sweet tooth, but wow, it really is delicious. Chocolatey, light, not too sweet.
