I made this delicious, light, vegan lemon cake with Blueberry compote for my dear friend who came to stay. She is a strict vegan. We all thoroughly enjoyed this fluffy dream of a cake. I served it with vegan creme fraiche on the side, just in case visitors didn’t want a creamy/yoghurt topping. The cake didn’t need the topping as it was truly Scrummy.
